摘要
为对今后减肥饮品研制及生产提供理论参考依据,以一系列中药(荷叶、山楂、绞股蓝、决明子、葛根)为液体培养基,接种纳豆芽孢杆菌进行发酵,通过单因素试验研究结果(接种量、发酵温度、发酵时间、加糖量),来确定纳豆芽孢杆菌在上述液体培养基的最适生长条件。正交试验结果表明:接种量0.6%、温度40℃、发酵时间14 h、加糖量4%时,发酵饮品可以达到较高的脂肪酶和超氧化物歧化酶活性。
In order to provide theoretical reference for the development and production of diet drinks in the future, a series of traditional Chinese medicine(otus leaf, hawthorn, gynostemma, cassia seed and radix puerariae) were used as the liquid medium, and Bacillus natto was inoculated for fermentation. The optimum growth conditions of Bacillus natto in the above liquid medium were determined by single factor test results(inoculation amount, fermentation temperature, fermentation time and sugar addition amount). The orthogonal test results show that the fermented drink can achieve higher lipase and superoxide dismutase activity when the inoculation amount is 0.6%, the temperature is 40 °C, the fermentation time is 14 h, and the sugar addition amount is 4%.
