摘要
将温和气单胞菌(AS7)及添加不同种类的AHLs信号分子标准品(C4-HSL、C6-HSL和C8-HSL)的菌液接种于大菱鲆无菌鱼块中,通过测定其在4℃冷藏过程中新鲜度指标(感官评定、菌落总数、pH、K值、持水性)的变化,研究群体感应对温和气单胞菌体内致腐能力的调控作用。结果表明,在贮藏期间添加C4-HSL和C8-HSL信号分子标准品,能够明显促进温和气单胞菌的生长,且对鱼块pH、K值、持水性及其品质变化影响较明显;而添加C6-HSL对其新鲜度指标均没有显著影响,说明群体感应可以通过AHLs来调控温和气单胞菌致腐能力。
        The regulation of quorum sensing to the spoilage ability of Aeromonas sobria AS7 was studied by measuring the freshness indicators(sensory evaluation, total bacterial count, p H, K-value, water binding capacity) of turbot sterile fish blocks inoculated strains AS7 refrigerated at 4 ℃, contrasted to the samples adding different kinds of AHLs standard signal molecules. The results showed that adding C4-HSL and C8-HSL respectively showed significant correlation in different freshness index, but adding C6-HSL had no significant impact on the spoilage ability of bacteria. In conclusion, quorum sensing could regulate the spoilage ability of AS7 by AHLs.
