9种内源酶对南极磷虾中氟迁移的影响

大量研究表明,南极磷虾在自溶过程中伴随着氟的不可逆迁移,而南极磷虾体内大量的内源酶对自溶产生重要影响。为研究南极磷虾体内内源酶对氟迁移的影响,以胃蛋白酶、羧肽酶A、甘氨酸羧肽酶、胰凝乳蛋白酶、胰蛋白酶、碱性磷酸酶、羧酸酯酶、胆碱酯酶、芳香基硫酸酯酶9种酶为研究对象,通过添加相应抑制剂来抑制酶活性,探讨9种内源酶对南极磷虾氟迁移的影响。结果表明,羧肽酶A、胰凝乳蛋白酶与虾壳中氟的溶出呈显著正相关趋势;胃蛋白酶、甘氨酸羧肽酶、胰蛋白酶、碱性磷酸酶、胆碱酯酶与虾壳中氟的溶出呈显著负相关趋势;胃蛋白酶、羧肽酶A与虾肉中氟的溶入呈显著正相关趋势;甘氨酸羧肽酶、胰凝乳蛋白酶、碱性磷酸酶、羧酸酯酶、胆碱酯酶与虾肉中氟的溶入呈显著负相关趋势。9种内源酶对南极磷虾中氟迁移的作用效果不一。
A large study showed that the fluorine irreversible migration of Antarctic krill in the process of autolysis.Plenty of endogenous enzymes playan important role inthe process of autolysis.Nine endogenous enzymeswere selected to study the effects of different endogenous enzymes on migration of fluoride,such as pepsin,carboxypeptidase A,Glycine carboxypeptidase,chymotrypsin,trypsin,alkaline phosphatase,carboxylesterase,cholinesterase,arylsulphatase.To inhibit enzyme activity,different inhibitors were added into Antarctic krill.The results showed that the dissolution of fluoride in krill carapacehada significant tendency of positive correlationwith carboxypeptidase A and chymotrypsin.The dissolution of fluoride in krill carapacehada significant tendency of negative correlationwith pepsin,Glycine carboxypeptidase,trypsin,alkaline phosphatase,cholinesterase.Compared with blank group,the integration of fluoride in krill musclehada significant tendency of positive correlationwith pepsin and carboxypeptidase A.Compared with blank group,the integration of fluoride in krill musclehada significant tendency of negative correlationwithglycine carboxypeptidase,chymotrypsin,alkaline phosphatase,carboxylesterase and cholinesterase.Nine endogenous enzymes had different effects on migration of fluoride in Antarctic krill.
