摘要
本文测定了高白鲑肌肉中部分矿物质元素、氨基酸、脂肪酸、磷脂组成以及水分、灰分、粗蛋白、粗脂肪的含量。结果表明:水分、灰分、粗蛋白以及粗脂肪的含量分别为68.35、1.05、19.53、8.94%。高白鲑富含丰富的多不饱和脂肪酸,占总脂肪酸含量的31.28%。在氨基酸的组成中,谷氨酸的含量最高并且必需氨基酸与非必须氨基酸的比值为0.67.在磷脂组成中,磷脂酰丝氨酸和磷脂酰甘油的含量最高。实验结果表面,高白鲑有较高的营养价值与保健作用。
Muscle tissues from coregonus peled were analyzed with regards to its proximate composition, in addition to its mineral, amino acid, fatty acid, and phospholipid class composition.The relative moisture, ash, crude protein, and crude lipid were then determined. Moisture, ash,crude protein, and crude lipid contents were 68.35, 1.05, 19.53, and 8.94% respectively. It also found to be a good source of polyunsaturated fatty acid(31.28%). Glutamic acid was the major amino acid and the ratios of essential amino acids: nonessential amino acids was 0.67. In terms of phospholipid composition, phosphatidylserine and phosphatidylglycerol displayed relatively noticeable amounts. Overall, the present study revealed that coregonus peled had a high nutritional value, which is good for health.
