休闲酱卤制品加工及调味

摘要
休闲卤制食品是深受我国消费者喜爱的一种传统中式食品。目前,休闲卤制食品按消费场所分主要包括休闲食品市场、餐饮消费市场和情景消费市场,其中以休闲食品市场占据大部分比例。本文就酱卤制品的定义、发展及天博香精香料在休闲酱卤制品中应用工艺做了详细阐述,优化了传统酱卤制品的工艺。
As traditional Chinese food,snack marinated foods are very popular among Chinese consumers.At present,snack marinated foods are divided into snack food market,catering consumption market & scene consumer market according to the consuming place.Therein snack foods occupies most proportion.In this article,we give a detailed description from definition,development and the application technology of Tian bo flavors/seasonings in snack marinated foods,which optimized the process of traditional marinated foods.
