摘要
水产品味道鲜美,营养丰富,蛋白质含量高而脂肪含量相对较少,一直很受人们的青睐。但其在贮运、销售期间容易氧化、受细菌污染导致腐败变质。本文简单阐述了生物保鲜剂技术以及其在水产品等食品保鲜中的应用,并对其应用于水产品保鲜做了展望。
The aquatic products are delicious,nutritious,high protein content and fat content is relatively small,has been very popular with the people.But its during shipping,selling easy oxidation and contamination by bacteria cause deterioration.This article simply expounds the biological fresh-keeping agent technology and its application in aquatic products such as food preservation,and its application in aquatic were discussed.
