Binding properties of the natural red dye carthamin with human serum albumin: Surface plasmon resonance, isothermal titration microcalorimetry, and molecular docking analysis

Two main real-time detection means (SPR and ITC) were employed in our study. Binding ability decreased with increasing temperature. Hydrophobic force was the main factor in the binding process. The theoretical prediction was well explained by experimental results.
